Lentils are used a lot in vegan cooking, in Southern Germany, you will get lentils with Spaetzle, a sort of pasta and the Indian cuisine wouldn’t be the same without all the lentil and chickpea based dishes.
I don’t usually eat legumes with pasta as I then always feel that I eat too many carbs. However, today is such a grey and rainy day that I wanted to make a big pot of pasta with a sauce to die for. I can humbly report: check. I did it.
The sauce is very spicy due to the chili flakes and because I cooked the lentils in the sauce, they soak up a lot of vegetable stock which you have to add again so the sauce gets a bit thinner, it has so much flavour that you really have the feeling the sauce cooked for three hours at least. It only cooked for one hour so you need to have a bit of time today. Your reward will be the most delicious pot of pasta that will bring out the sun immediately. At least in your heart and on your plate.
By the way, I couldn’t decide between bolognese and lentils so I mixed and matched a bit. Vegetarians can simply omit the meat and add 50g more lentils or you substitute the meat with soy meat, mushrooms or more carrots. I love having a bowl of pasta in front of me, I can sit on my sofa, with a glass of wine, put the tv on or read a book and snuggle up in a cozy blanket to wait until the sun comes out again.
You don’t have to eat this lentil ragout with pasta, bread is fine as well. As with yesterday’s cucumber variation, the possibilities are endless.
I don’t like celery, so I always leave it out when I make a bolognese. Instead, I add a bit more onions or carrots. I also don’t use cheap wine for cooking, as everyone used to recommend in earlier days. I don’t pour hundreds of euros worth of wine in our food but I always choose something that I also enjoy drinking. If you add wine that you don’t like, you, unfortunately, will taste it in your dish. So don’t save at this end.
There’s not much to add, I’m afraid. Cook the dish and make changes according to your taste: use more chili or less, add cheese, leave out the meat, add more meat, more lentils, use different veggies etc.
